Makes one 12inch Pizza

250g Ball of Basic Ball ( See Recipe for Basic Dry Yeast Pizza Dough)

100g tinned San Marzabo whole peeled tomatoes

150g Fior Di Latte Mozzarella

Handful of Fresh Basil

Extra Virgin Olive Oil


Step 1

Pre-heat your Icarus 860 Oven, with Door Oven on, and Electrical Elements on High, until the floor of the Oven reached a temperature of 380.C.

Step 2

Hand squeeze the tomatoes (doesn’t not have to be smooth, or completely uniform). Slice the mozzarella, and make sure basil leaves are cleaned and picked off steams. Leave these ingredients aside and ready to use,

Step 3

Shape out your dough, and place the dough on your pizza peel, spread tomatoes leaving the edges clear to about 3-4cm. Scatter evenly the mozzarella, and place basil leaves on top. Place the Pizza straight on the Icarus Oven floor and cook for 1-2 minutes, until the crust is evenly coloured and cheese is all melted and bubbly.

Step 4

Once pizza is cooked, pull it out using a pizza peel, drizzle with olive oil. Let the pizza sit for a 1 minute or 2 to let ingredients set before slicing.
